Mums Oaties

These “oaties” are a recipe passed down from my late Nana Doris, and my most requested recipe from guests. They are more of a hybrid between a granola bar and a flapjack, and I usually call them granola bars for my American guests as it’s easier. The name doesn’t really matter though because these are always eaten up in seconds. They are a perfect mid afternoon snack, and usually best eaten straight out of the fridge.

Ingredients
Method
- Preheat oven to 180 degrees C
- Melt together light brown sugar, butter, baking soda, hot water and honey in a saucepan. Remove from heat once melted.
- Combine oats, self-raising flour and cranberries to the saucepan.
- Add mixture to a baking tin (I use a 9×9 square silicone baking pan but you can use any size)
- Bake in pre-heated oven for 20 minutes
- Remove from oven and immediately top with the chopped dark chocolate. Spread around over the top while the chocolate melts until completely covered.
- Once cooled, leave in fridge for several hours then remove and slice into bars or square. These are usually best enjoyed straight out of the fridge.
