Preheat oven to 180 degrees C
Melt together light brown sugar, butter, baking soda, hot water and honey in a saucepan. Remove from heat once melted.
Combine oats, self-raising flour and cranberries to the saucepan.
Add mixture to a baking tin (I use a 9x9 square silicone baking pan but you can use any size)
Bake in pre-heated oven for 20 minutes
Remove from oven and immediately top with the chopped dark chocolate. Spread around over the top while the chocolate melts until completely covered.
Once cooled, leave in fridge for several hours then remove and slice into bars or square. These are usually best enjoyed straight out of the fridge.
