Frangipane
- Melt butter in a suacepan. Take off heat and add ground almonds, sugar, egg and almond extract.
Banana Bread
- Preheat oven to 180℃ degrees
- Melt butter in saucepan. While melting, mash bananas in a large bowl. Add melted butter to the bowl and mix to combine.
- Combine flour, sugar, egg, vanilla extract, almond extract and baking soda into the bowl with the bananas and butter and mix until just combined.
- Add half the batter to a lined baking loaf tin. Add spoonfuls of half the frangipane mixture and use a skewer or fork to swirl frangipane mixture across the batter. Add the remaining batter and then top with the remaining frangipane. Top with the flaked almonds until covered.
- Bake in pre-heated oven for 45 minutes, or until a skewer comes out clean.
- Allow to cool for 5-10 minutes, then remove from the loaf tin. Dust icing sugar on top for some finesse.
