Almond Croissant Banana Bread

Ingredients
  

Banana Bread
  • 3 bananas riper the better
  • 185 g all-purpose flour
  • 100 g granulated sugar
  • 75 g butter
  • 1 tsp baking soda
  • 1 egg
  • 1 tbsp almond extract
  • 1 tsp vanilla extract
Frangipane
  • 100 g butter
  • 100 g ground almonds
  • 100 g granulated sugar
  • 1 tbsp almond extract
  • 1 egg
  • 4 tbsp flaked almonds

Method
 

Frangipane
  1. Melt butter in a suacepan. Take off heat and add ground almonds, sugar, egg and almond extract.
Banana Bread
  1. Preheat oven to 180℃ degrees
  2. Melt butter in saucepan. While melting, mash bananas in a large bowl. Add melted butter to the bowl and mix to combine.
  3. Combine flour, sugar, egg, vanilla extract, almond extract and baking soda into the bowl with the bananas and butter and mix until just combined.
  4. Add half the batter to a lined baking loaf tin. Add spoonfuls of half the frangipane mixture and use a skewer or fork to swirl frangipane mixture across the batter. Add the remaining batter and then top with the remaining frangipane. Top with the flaked almonds until covered.
  5. Bake in pre-heated oven for 45 minutes, or until a skewer comes out clean.
  6. Allow to cool for 5-10 minutes, then remove from the loaf tin. Dust icing sugar on top for some finesse.
